Do airlines that still operate the older aircraft still utilize crew to fit in every seat in the flight decks of older aircraft, such as the seat right behind the copilot. Has technology given those airlines a chance to operate older aircraft with just a 2 man flight deck even if the third or more seats are still up front?

I have come across some photos of older aircraft on various other sites showing the flight deck with just the pilot and co-pilot seats filled, perhaps the photographer was the person who was supposed to sit behind the copilot, I do not know.

Hmmm...I don't know about ALL of them, but there are a handful of A/C that do operate with a three man flight deck, but this is usually in more remote parts of the world.  Some older fleets, such as FedEx's DC-10's were modified to a 2-man flight deck with new cockpits, and re-designated as MD-10's.  The few DC-8 operators...I have no idea!

Like you said, unless converted a three man crew is required. Also unless converted the aircraft type certificate will require it. The physical location of system controls and lack of computerization make the work load such that a 3rd crew member required.

Pretty sure FedEx's 727's all require a Flight Engineer.
